As you glide through the hilly landscape of Oaxaca, you see thin columns
of smoke rising into the air. They mark the almost ritualistic process behind
the production of mezcal. A traditional Mexican spirit.
The combination of the glowing
hot lava rocks and the wet agave hearts dug into the ground, gives a quiet but
constant column of smoke. If you follow these white pins in the landscape, you
will meet a black horse. The animal pulls the 6-ton heavy stone over the baked
agave hearts, and they are now ready for distillation.
